Fried Tuna and Potato Patties

Ok I know I have done the baked ones, but this one has a slightly different pastry unlike the baked one. I used the egg to make my pastry richer but its not really necessary to add it.  My mother in Law makes this kind of pastry and its also found in some of the Hedhika ( local snack) shops.
Since the theme for this month's challenge in the Muslimah Bloggers' was  to create a Ramadhan Recipe from Islamic world. Well Maldives is a Muslim Country and I feel this recipe fits the bill. Its often made in my home almost like once a week. Even though its not an authentic one , has the influence of Sri Lanka in it.Its almost like a curry puff you get in places like Malaysia , just no curry flavor.

Recipe: Fried Tuna And Potato Patties.

150g potatoes, boiled and mashed
1 can of tuna, drained and flaked
1 medium onion, thinly sliced
1/4 of a scotch bonnet pepper , thinly sliced
1/4 tsp grated ginger
6 curry leaves, thinly sliced
1 lime
1/4 tsp ground black pepper
2-3 tbsp oil

Pastry dough : 1 1/2 cups flour
                        pinch salt
                        1  tbsp oil
                        1 small egg ( optional)
                        enough warm water to make a smooth dough

Prepare the filling, In a bowl mix the tuna with salt , pepper and lime juice. Use 1/2 lime juice first , taste then add some more if needed.

Heat the oil  in a saucepan or large frying pan.  Saute the onions in till softened and starts to brown. Add the tuna, scotch bonnet, curry leaves and stir fry for a few minutes. Then stir in the mashed potato. Stir to combine, taste adjust salt , lime juice and pepper. cool

Make the dough by sifting the flour into a bowl along with salt . Make a well in the centre and add oil. Add the egg and mix a little into the flour. Add warm water a little at at time , mixing with a spoon , and then with your fingers till it comes together. You will probably need just a few tablespoons of water if using the egg.
Knead the dough to make a smooth dough. Divide into about 10 small portions. Roll  into thin circles and lay it on the curry puff mould.  Add a heaped teaspoon of filling , brush the edges with water and seal with the help of the mould.

If you don't have a curry puff mould,  spoon into the middle of the rolled dough,  brush the edges with water , fold the other side and press a fork along the seam to seal.

Heat oil for deep frying, and  once its hot, lower heat to a medium and fry the patties in batches, till dark golden brown. Drain on to kitchen paper.  Enjoy!

  3. Ah, what a recipe to choose! Thank you for always sharing something from your country... :) I guess the food made and shared in the Indian Ocean belt have influences from each other all the time... The patties sound lovely, always make it with chicken filling... :)
