Spicy Fish Curry
Recipe : Spicy Dried Fish Curry
300g tuna or any other firm fish cut into 1-inch cubes
1/2 tsp ground black pepper
1/2- 1 tsp red chilli powder ( that's ground dried red chillies,)
Juice of 1/2 lime
1 red onion or 2 small onions, sliced
6 cloves garlic, grated
1" ginger, grated
salt
1 tsp dark soy sauce
1 tbsp light soy sauce
3-4 tbsp tomato sauce/ketchup
8 curry leaves
3" pandan leaf, cut into large pieces
1/4 scotch bonnet, roughly chopped
1/2 tsp sugar ( optional)
3/4 cup water

1. In a glass bowl, mix tuna with pepper, chilli powder lime juice and pinch salt along with garlic and ginger. Mix well and set aside.
2. Heat about 2 tablespoons oil add onions curry leaves and pandan leaf. Fry till the onions go soft and start to go golden. Switch off the heat.
3. Add marinated fish, along with light and dark soy, tomato sauce and scotch bonnet. Pour 1/2 cup water, place back over medium heat and cook lid on. Stir occasionally, and cook for about 15 minutes.
4. Taste and add sugar if you want to balance the heat. Adjust salt. Switch off and serve with any kind of flat bread or even rice if you prefer.

its not dried fish , its a dry curry as there is very little curry, its made using fresh fish
