Sardine Curry

I  discovered a can of sardines hiding inside my small pantry cupboard.  Some people might not like it as sardines has quite a strong taste.  I dont normally eat sardines everyday its more of an occasional thing. But then again, they are good for you too.
Anyway back to my can of sardines , I decided to  make a curry out of it.  Its one of those recipes which is economical and using ingrediants that are usually already at home. Unless you are one of those people who dashes off to buy groceries and spices only when its time to cook.

Recipe: Sardine curry:  my own invention

for 3-4 people
1 can (425g) of sardines in tomato sauce
1 medium onion, sliced
2 cloves of garlic, grated or pureed
2 tsp of curry powder( use any kind, just dont go for the thai pastes, I used  a fish curry powder)
pinch ground pepper
1 red or green chilli slit in half
5 curry leaves
A big handful(thats about 1/3 cup) of green peas , frozen or canned or fresh
water or you can use stock ( or a stock cube mixed with water)
salt to taste

For the extra kick (optional, but makes it tastes even  better ) : 1 clove of garlic, small handfull of coriander leaves, zest of 1/2 a lemon)

1. Heat oil in a small saucepan , saute' your onions with the curry leaves till the onions are soft, and translucent.

2. Bring the heat down low, add garlic, chilli and curry powder, add a little water to prevent the spices from burning and giving you a coughing fit .

3. Stir in the can of sardines. Carefully break the whole ones in half, stir gently. Pour water or  stock into the empty can of sardines till  its half  of the can, swirl and pour contents  into the pan. Bring to a boil and simmer gently till the flavours come out and sauce slightly thickens slightly. taste and add salt.

4. Now to jazz it up, while the curry is cooking,  finely chop coriander leaves  and garlic together , mix in the lemon zest and then sprinkle this on top of the curry  just before switching it off and gently mix it in. Cook 1 minute and switch off , let it sit for 10 minutes before serving. 

Serve with some bread  or flat bread.
