Roti John

This is a malaysian snack , I can across this in a local cook book . Its a good as a snack or breakfast, lunch, dinner.

To make one roti john :

1 hot dog bun
Butter/vegetable spread
Sausage meat ( one sausage would do) or ground chicken or meat about 1/4 cup?
1 spring onion , chopped/ or a small red onion
1 green chilli chopped ( or use 1/2 tsp of bottled hot chilli paste of your choice
1 large egg
salt /pepper
Oil (1 tbsp)

1.Cut the bun in half, spread with butter , and place in a hot frying pan , buttered side down and toast for a minute.Set aside.

2.Heat oil in the same pan, add spring onion and stir fry for 1 minute till it goes slightly soft.

3.Add meat, and fry on high heat to brown the meat and cook it through. Stir in chilli and seasoning.

4.Crack the egg in a bowl, pour the meat mixture into the egg and beat till everything is mixed . Heat the frying pan again, add pour your egg mixture into the pan, stir a little to get everything spread out evenly. Cook over a medium heat for 1 minute , then place the hot dog bun, buttered side down on the egg .

5.Let it cook , then Once the egg is cooked throught and set , switch off. Serve with your favourite chilli sauce or ketchup some fresh tomatoes and cucumber slices .

Ps i like to add a little grated chedder into the egg mixture, if adding cheese use less salt in the meat.
You can also try making this with canned flaked tuna.
