Tres Leches Cake



During the Ramadhan month, I had a few readers asking me for various recipes. Just recently I had a request for the recipe for this cake.  I have heard of this particular cake but never tried to make it.
Tres Leches cake is a  cake soaked in three kinds of milk products. Hence the name Tres Leches cake, meaning three milk cake.
I was not sure how the cake was going to taste, but it was surprisingly delicious. The cake soaks up the sweet milk mixture and you get a sweet pudding-like cake. For me, it was a bit sweet so I served it with strawberries or passionfruit.

Recipe: Tre Leches Cake, recipe adapted from Taste better from Scratch.

1 cup flour
1 1/2 tsp baking powder
5 eggs
1 cup sugar
1/3 cup milk
1 tsp vanilla

1/4 cup milk
1 can of evaporated milk
1 can condensed milk

500 ml whipping cream
1 tbsp sugar
1 tsp ground cinnamon
fruit, such as strawberry or passionfruit
1 tsp butter to grease the pan + 2 tsp flour

Grease about 9- 10 inch round baking tray with about 1 teaspoon of butter and then dust with flour. Tap the baking tray to remove any excess flour. Or you can use a rectangular baking dish.  Set aside.
Preheat oven to 180- 200 Degree C.

To make the cake, separate the eggs, and yolks into one bowl the whites into another, and make sure the bowl is oil-free.

Whip the egg whites till stiff, add 1/4 of the measured sugar and whip till stiff peaks. Set aside.

Whip the yolks and remaining 3/4 cup of sugar and then add vanilla and milk.  Fold in half of the whites into the yolk mixture. Then fold the remaining whites. Pour into the prepared baking tray and bake for 30- 45 minutes till cooked through. (A skewer or toothpick should come out clean when inserted)

While the cake is baking prepare the milk mixture. Mix milk, evaporated milk and condensed milk in a large jug or bowl. Set aside till the cake cools.

Once the cake is baked and completely cooled in the tin, poke holes all over the cake using a bamboo skewer or a fork.  Pour the prepared milk mixture carefully onto the cake. It will slowly soak in the milk. Place in fridge for a few hours or overnight.

When its time to serve, whip the cream with sugar until soft peaks. Spread on top of the cake. Dust with ground cinnamon and top with sliced strawberries or passionfruit. You can even serve without the fruit.

  2. Tres Leches cake is one of my favorites. I do two types and one is a chocolate version. Yours sounds great!
