Cheesy Tuna And Vegetable Pinwheels


This is a great way to use up left over  roshi, or flat bread, something which I am sure will be in excess during Ramadhan.
Its an easy to make  recipe , it can be served as a little snack  or even as a way to get kids interested in eating  vegetables, its quite cheap and can be made in advance and left to chill , just cut it up  before serving. Kopee fai is  a local green, the taste is said to be a lot like Kale.

Recipe: Cheesy Tuna and Vegetable PinWheels inspired by the recipe Turkey Roll Ups as seen on Culinary Hill

6 Tortilla Wraps or   roshi
6 Kopeefai or use  lettuce instead
1 1/2 cans tuna, drained
2 tsp cheese spread
( chopped fresh herbs  optional, you can use chives, or parsley if you like)
1 -2 spring onions, finely chopped or 1/4 onion chopped finely
Juice of 1/2 lime
big pinch of  ground black pepper
1 coarsely grated carrot

In a mixing bowl, flake the tuna, add herbs if using, add onion, juice of lime salt and pepper and cheese spread and mix  well. season with salt and pepper. A little tabasco is also nice.

Now take a flatbread, top with a leaf ( make sure you have removed the woody stem)


 then spread the tuna paste evenly on top, leave a 1/2 inch empty space around the edges.


Next add the grated carrot in a layer. Now take one side and roll up tight.


Wrap with cling film or foil and chill for at least 20- 30 minutes.


Then remove the cling film and cut into slices.  Enjoy. If you are serving this in a party you can put a skewer as I have done so it stays in place.
