Valhomas Spaghetti

I have two very close friends and occasionally we get together and head out for dinner. So one time last year we headed out for the much-awaited dinner night. After much debating we once headed to one of the most happening places in town, Thyme
.I  had already done my homework on the place and so chose the much talked about Valhomas Spaghetti, or in English smoked tuna spaghetti. It was pretty good and loaded with dried chillies that can cause you to sweat a little or a lot. if you don't eat much chillies.  I wanted to replicate the recipe, and after many tries,  I came up with this recipe.

Serves 2 adults and 2 kids. Or 3 adults.

Recipe : Valhomas Spagetti,  recipe inspired by Valhomas Spagetti served at Thyme

3 cloves garlic, thinly sliced
8-10  curry leaves
a good helping of dried chilli flakes ( or grind a 2-3 dried chillies ) depending on how hot you like.
250-300g tomatoes quartered
8-10 black olives, pitted
250g spaghetti
150g valhomas ( I used the ones in Seagull Store), that's Maldivian Smoked Tuna, thinly sliced
some lime juice
50g grated parmesan

First,  place the tomatoes in a baking tray with a little olive oil and a pinch of salt and place in a hot oven about 180 degrees C for about 30 - 45 minutes  ( middle shelf)  to roast.  The tomatoes should colour a bit and go slightly soft. Remove and set aside.

Put a large pot of water with salt to cook the pasta, boil and add pasta and cook the pasta till done, drain, reserving 1/2 cup of the cooking water.

Heat about 3 tbsp of olive oil, add the valhomas and curry leaves and stir fry for 5 minutes, remove.

frying the curry leaves next to it are my    tray of roasted  tomatoes

Add another tablespoon oil, if there isn't any in the pan,  along with the garlic, and once it starts to soften and give its aroma, add the tomatoes, along with 1/3 cup water, and simmer for 1-2 minutes. Return the valhomas and curry leaves, olives, chilli flakes and another 1/3 cup of the pasta cooking water.  Cook 1-2 minutes and add the spaghetti, toss to mix through, and add a little of the cooking liquid if it looks dry.  Switch off, and remove the pan from the heat. Stir in the cheese, and toss it through. Serve topped with some extra parmesan cheese.

Note: If you don't have parmesan, stir  in 1-2 tsps of cream cheese spread before you add the spaghetti,  stir it through so it mixes into the sauce and then add the spaghetti.

  1. I am not a fan of spaghetti, but this one looks interesting with the chillies and the fish flavors...

  3. I love spaghetti and I would love to try these, but I don't think I would be able to get smoked tuna here, I have never seen it. Could I use another kind of smoked fish or would that be very different? I like smoked fish but never had it with pasta.

  4. I have never had seafood with pastas. But all the spices and heat involved may be I should try. Trying to recreate what you ate is an art. MashaAllah.
