Tropical Cheese Cake Trifle



It's April, which means it's one of the hottest months in Maldives.  I take my boys out to the swimming track each day late afternoons and unlike most people we walk. A good 15-minute walk in the hot sun, the boys well protected with sunscreen although I have no idea what colour my eldest's skin is,  as he is pretty tanned, for he has been swimming for almost 3 years now.
He is not a soccer kid, so I wanted to get him into an active sport, as he was pretty skinny, still is but has a better appetite. After a couple years with various coaches I am finally happy with my new coach or rather coaches of New Lagoons Swimming Club ( see note below ). The boys don't go into the swimming pool indoors( although sometimes I do wish they would build one for these kids),  the kids swim in a track made in the lagoon  in Male' city

Thankfully I get to sit in the shade and its another brisk walk back home.
The weather is so hot!!   So This is the perfect little desert to eat, it is like as you say Summer in glass, all the tropical fruit, chilled and looks very inviting and pretty...

Well, I guess you would call it a trifle as its got the layers of cream fruit and all. I saw this recipe on BBC's Goodfood website, where there was a recipe which said Strawberry cheese pots only it wasn't your typical cheese cake but was tumblers filled with biscuit crumbs cream cheese and strawberries. Since strawberries were pretty expensive I thought  I would stick to local fruit so used mangoes and passion fruit. I  forgot to get some digestive biscuits but had some Nice coconut biscuits and thought coconut would go well with tropical fruit so used that instead.

Serves 6

200ml  whipping cream
200g cream cheese
6 tbsp  icing sugar, sifted
275g chopped mangoes( peeled and chopped)
2-4 tbsp  water
3-4 passion fruit ( use the wrinkled ones )
a small packet of coconut biscuits


Whip cream and cream cheese and about 4 tbsp icing sugar, till thick. Set aside

Add the mangoes to a blender, along with the remaining 2 tbsp of icing sugar and blend to a puree. If it doesn't move add a little water, a tablespoon at a time.

Mix 1/3 of a cup of the mango puree into the cream cheese mixture.

Place the biscuits into a plastic bag and give a good bash with the rolling pin till you get fine crumbs.

Now to assemble, you can either use a flat-bottomed bowl or flat-bottomed 6 individual tumblers, 

Add a layer of biscuit crumbs at the bottom, then a layer of cream cheese, and mango puree, then top with a passionfruit. Chill for a few hours and serve.
