Cauliflower Curry : a slightly modified Madhur Jaffrey Recipe



A few months back I was flipping through the channels when I came across a familiar face, in a not-so-familiar stage.  It was a movie called Today's Special, and it featured Madhur Jaffrey as the mother of the lead actor in the movie. She was so cute! I mean I have seen her cooking shows but never saw her acting chops.

Anyway for this week's theme at IHCC was to cook any dish by Madhur Jaffrey. I wanted to cook something that had cauliflower as I had lovely fresh cauliflower in my fridge. So I googled and found this recipe which was from her book: An Invitation to Indian Cooking.  The only adaptation I had was I ran out of ground coriander so I used just 1 tsp instead of 2  and used ground red chilli powder and left the green chilli out in case it got too spicy for the boys.

Recipe: Cauliflower Curry adapted recipe of Madhur Jaffrey's Cauliflower with onion and tomato recipe from Scott's Favorites.

300g cauliflower, cut into bite-size florets
1 medium onion, roughly chopped
2-3 cloves garlic, 
1/2" ginger , sliced
2 medium tomatoes, chopped
1/2 tsp turmeric
1 tsp ground coriander
1 tsp ground cumin
1/2 tsp chilli powder
1 tsp garam masala
juice of 1/2 a lime 
salt to taste
1 tbsp coriander leaves chopped.
1/3 cup water
oil

Place your onion, garlic and ginger in a blender with a few tablespoons of water and blend to a paste.( make sure you wash it well later before making any smoothies or juice, don't want oniony-smelling drinks do we)

Heat oil, add the paste and fry for a few minutes,  then add tomatoes, coriander leaves and the spices.  In the recipe, I added just a tablespoon of water, but I was afraid it might catch and burn so added about 1/3 of cup of water. 

Then add the cauliflower, mix well, cover and let it simmer for about 8- 10 minutes till the cauliflower is tender. 

Taste add salt and finally squeeze in some lime juice and then serve as a side with rice.

  2. I would probably cut down on the chili amount too, as we like it more in the medium range. Sounds good!
