David Rocco's Grape Pizza


David Rocco is very popular in our house. My mom loves watching his shows. On a recent visit to Tanzania for an official workshop, my hubby returned home with a huge bag of gorgeous grapes!!! I have been wanting to try his grape pizza recipe but with grapes being slightly expensive I kept putting it off.
So I was pretty happy with my delicious present :). Even after distributing to my sisters and to my in-laws I still had enough to make this.
My little fussy one helped make it, he was so happy squishing the grapes into the dough, the messier the better,  one very happy little 4-year-old.  The end result was a sticky sweet bread, I think it was more like a sweet focaccia than pizza.

Recipe: Grape Pizza  recipe from David Rocco's grape pizza recipe

 about 500g of fresh pizza dough ( use half of the recipe here)
1 big bunch of dark purple grapes, (you need quite a big bunch)
1 cup sugar
1 -2 sprigs of rosemary, broken into big pieces
3 tbsp olive oil

Preheat oven to gas mark 5, about 190 degrees Celcius.

Stretch your dough into a large rectangle.  Lightly grease a large baking tray with olive oil. Place the dough on the tray, a bit will be left sticking out but leave it like that.

 Take half of the grapes and squish them into the dough, pressing it into one-half of the dough. Sprinkle with half the sugar and half the rosemary leaves. Then fold the half that is left without the grapes and press down so the grapes are sealed in, repeat with the grapes, sugar and rosemary on the top layer.

Pop into the oven and bake for 20 minutes till golden and bubbly. Remove and let it cool, for about 10 minutes before slicing.

To make your life easier, cover the tray with foil before you begin so its easier to clean up. The easiest way to clean up hardened sugar is to add hot water and gently coax the bits off with a wooden spoon. That way you get it cleaned up nicely without scratching the surface of the baking tray.
