This is one of my favourite salads to make, especially as an accompaniment to fish dishes especially my mum's potato pie. Its a very easy dish and best made just before serving. You can make the dressing earlier but blanch the beans just before serving and toss in dressing while still warm. Its a Jamie Oliver recipe which I found in one of my favorite books Jamie's Dinner's.
Recipe : Green Bean Salad , recipe from Jamie's Dinners
200g green beans
5 tbsp olive oil preferably extra virgin
2 tbsp white grape vinegar
¼ tsp mustard
1 small clove of garlic
2 tsp water1 spring onion, finely sliced
Make dressing : Mix everything in a small clean glass bottle ( like an empty and cleaned jam jar) or a small bowl. The bottle method is easy as you just put everything in it , put the lid on tight, and give to your child and ask them to give it a good shake. Taste and adjust seasoning and add the spring onions
String the beans, cut into bite size pieces. I like to cut at an angle so the beans look more pretty.
Bring a pan of lightly salted water to a boil . Add the green beans and boil for 5-8 minutes till just tender , remove and drain and add to a bowl.
Add the dressing and mix it through the beans. Serve as soon as possible.
