Kulhipaan Boakibaa ( Savoury Bread Cake)


I posted a sweet bread cake ( paan boakibaa) a long time back, this is the latest savory version.  I never had this when I  growing up so most probably this was introduced very recently. A cousin of mine made this last Ramadhan and it was such an easy recipe and a great way to use up leftover bread. In my house its essential to have a savoury and sweet snack for breaking fast.  It's a good pick me up later during the night when feeling hungry and want a little snack.

5 slices of sandwich bread
8-10 curry leaves, finely chopped
1 medium  onion, thinly sliced
1/4 scotch bonnet ( or 3- 4 green chillies) thinly sliced
1/2 " ginger grated
1/2 tsp turmeric
Juice of 1 lime
4 large eggs, beaten
2 cans of tuna , oil or water drained and flaked
pinch black pepper
salt
oil for greasing the pan

Preheat oven to gas mark 5 or 6 ( a fairly hot oven). Oil an 8 inch round tray generously, and line the bottom with baking paper if you like.

Place your bread in a food processor and turn to breadcrumbs, you should have 2 cups of breadcrumbs. If you don't have a food processor just break up the bread into small pieces.

Place onion, ginger, and curry leaves in a bowl and add lime juice and pinch salt. Squish the onions with your fingers till they go soft and release their juices. Add chillies ( wear gloves) along with ginger and tuna and mix well. Add turmeric, pinch pepper and breadcrumbs and mix well, taste and adjust salt and lime juice if required.

Finally, stir in eggs and mix well.  Pour into the prepared tray, level the bottom, pop in the middle shelf of the oven and bake till the edges and top turn a dark golden, about 45 minutes.

Remove the tray from the oven, and let it cool in tin. Run a knife around the edge, turn onto a cutting board and cut it into cubes.

Serve with a nice hot cup of tea.
