Madhur Jaffery's Chicken, Red Lentils and Green Beans in One Pot



My hubby loves this curry, and couldn't stop eating at dinner time last night.   It is a lovely curry, and tastes delicious.  I threw in some curry leaves when making the tarka.  Sometimes I use homemade garam masala if I have one, or opt to use shop-bought.
Recipe : Chicken , Red Lentils and Green Beans in One pot recipe adapted from  Madhur Jaffrey's  Quick and Easy Indian Cooking.

For 4-5 people

500g chicken pieces ( with bone in) I used half of one whole chicken, jointed and skinned.
2 bay leaves ( use curry leaves if not available)
6 cardamon pods, ends slit off ( kaafooru tholhi)
3 cloves ( karanfoo)
1-2 inch piece of cinnamon ( fonithoshi)
2 dried red chillies, cut in half
1 cup red lentils ( rai mugu
1/2 tsp tumeric
3 cups water
1/2 tsp ground black pepper
1/2 tsp chilli powder
1/2 garam masala ( home made or shop-bought)
juice of 1/2 lime
100g green beans, stringed and cut into 1 1/2 inch pieces
1/2 tsp cumin seeds ( dhiri)
1 onion, sliced
2 cloves garlic, chopped
1 tsp ground coriander ( kothanbiri)
1 tsp ground cumin
2 tomatoes  roughly chopped
salt
oil

Place chicken in a bowl, with garam masala, pepper, chilli powder,  a pinch salt and lime juice and mix well. 

Heat a large pan, with about 2-3 tbsp oil,  add bay leaves, cardamom, cinnamon, cloves and dried chillies and fry 1 minute.


Add chicken and sear the chicken pieces, don't crowd the chicken, if the pan is not big enough to hold the chicken in one layer add in batches. Once the chicken is seared but not cooked through.  Remove to a plate and set aside.

Remove any excess oil from the pan, don't throw away the whole spices, leave them in the pan.  Add the lentils, that have been washed and drained, 3 cups water, turmeric and bring to a boil and simmer, half covered till lentils are almost cooked.

Return the chicken to the pan along with green beans,  cover and cook till the chicken is cooked through, add about 1/2 cup water if you feel the gravy is too thick.  Taste add salt to taste. 

While the chicken is cooking, in a separate frying pan, heat a little oil about 2 tbsp, add the cumin seeds and fry till they start to pop, add curry leaves and onions and fry till onions start to caramelize.  Add garlic, cumin coriander powders and tomatoes and cook for 2 minutes, stirring.  Stir this into the chicken mixture and give a stir. 

Taste again, I like to add a little extra lime juice just before I switch off.  

Serve with flatbread like chappati or Roshi or Nan etc.... Enjoy and have a lovely weekend

  2. Utterly delicious - this curry looks completely mouth watering, and I love that you shared an MJ dish with us this week. I agree with you about the chicken - I always prefer to use bone in chicken pieces in a curry.

  9. I can understand why your hubby, or anyone for that matter, would be in love with this curry. It looks perfectly spiced and oh so comforting. Reminds me that I need to get in the kitchen with Madhur Jaffrey because she really has some flavorful and wonderful meals.
