Mashed Potatoes With Spices



I came across this recipe in a low-fat Indian recipe book. I tweaked it a bit by adding some curry leaves and mustard seeds. Served it up with a spice-infused meatloaf ( will post the recipe soon once I am happy with the result of my meatloaf).  The boys loved it so for me that's all that I need to make it again. 
Recipe: Mashed Potatoes with spices, recipe adapted from the recipe  Broken potatoes with spices  from the book Low Fat Indian Cooking by Roshi Razzaq.

3-4 medium potatoes, peeled
1 onion, chopped.
1/2 tsp mustard seeds
6 curry leaves
2 plum tomatoes chopped
1 green chilli ( omit if making for kids)
1/4 tsp turmeric
salt
oil ( I used corn oil)

1. Boil your potatoes in a large pan of salted water till cooked through. Mash  roughly  and set aside

2. Heat a wok or large frying pan with a few tablespoons of oil add mustard seeds, once the seeds start to pop, add onions and curry leaves and soften the onion. 

3. Add the tomatoes and cook to soften the tomatoes a little, about 1-2 minutes. Add the mashed potatoes and turmeric ( and chilli if using), stir well to combine with all the ingredients and add salt to taste. If it looks too dry, add 2 tbsp milk.  

Serve with some spicy sausages or curried sausages. Personally, I won't mind it even in a sandwich or even on its own.
