Chicken, Prawn and Tomato Paella


I keep meaning to do a Donna Hay recipe but always forget to upload it or sometimes something goes wrong and the end result is not worth talking about.

Anyway, this recipe is very easy and its one of those one pot dishes that you can do  within an hour. I didnt get  medium grain rice so used basmathi rice, I used half a can of tomatoes  and also replaced chicken pieces with bone rather than using chicken breast pieces.  Sometimes  if I dont have parsley I sprinkle some fresh coriander leaves instead.

Recipe : Chicken, Prawn and tomato Paella Recipe adapted from Donna Hay's Chicken , Prawn and Tomato Paella

3 chicken legs ( thigh and drumstick jointed , skinless)
8 prawns
1 medium onion, chopped
2 cloves garlic chopped
1/2 tsp chilli flakes
1/2 tsp smoked paprika
1 cup basmathi rice
400ml  water
1 chicken stock cube
1/2 can ( 400g) peeled whole tomatoes
olive oil

1. Heat oil in a large frying pan, sear you chicken pieces till lightly golden on outside but not quite cooked through. Remove , cook your prawns till they have a nice orange colour, remove.

2. Add onions to the pan, along with garlic and cook till soft and translucent. Stir  in chilli flakes, paprika and can of tomatoes.Break the tomatoes up and add water, crumble the chicken stock cube in.( use fresh stock instead of water if you have). Mix and bring to a boil.Taste the sauce and add salt.  Once it starts to bubble, add the rice and arrange the chicken pieces on top, cook over a medium heat.

3. Once the water on the top evaporates, arrange the prawns on top and put the lid on and cook on a low heat for 2 minutes, Switch off heat and let it sit for another 5 minutes before fluffing it up. Sprinkle some roughly chopped parsley ( or coriander leaves) and serve.

  17. I love making paella - actually, any kind of one-pan dish always appeals to me, but paella is such a great way to feed a crowd. It's always flavourful, and comforting. This looks like a great version - I need to try it.

  18. I will tell you something... You can say to Donnay Hay that she has no idea of what paella is!!!
    Of course your rice looks delicious. As all the dishes you bring to us :)
    But I will look for a true paella recipe and translate it into english for you ;)
