Bubble and Squeak Mash


When growing up I remember reading about bubble and squeak in some of Enid Blyton books.  It left me wondering what on is this bubble n squeak. It was  later when I got my copy of  Jamie' Oliver's Jamie at home where I found his version of bubble and squeak.  It looked like a big pancake of   leftover mash  ( or baked potatoes )mixed with vegetables such as cabbage , carrots , brussels sprouts etc.  I learned that they call it bubble n squeak due to the sound it makes  when its been cooked .

I came up with the idea of this mash after seeing a recipe,  by Gordon Ramsey  . It turned out delicious and went down well with a hearty beef stew (recipe to be posted soon).  My boys who usually didnt enjoy mash loved it.

Recipe : Bubble and Squeak Mash recipe inspired by Gordon Ramsey's  Twice- baked bubble and squeak jacket potatoes 

600g potatoes ( or left over baked potatoes )
1 1/2 cup shredded  cabbage ( I used white cabbage but if you can use savoy if you like I think it would taste delicious with this, we dont get savoy cabbage over here)
1 cup broccoli florets ( frozen ones, thawed or if using fresh , blanched), roughly chopped
1 fat clove of garlic grated
1 tbsp butter
1-2 tbsp olive oil
about 1/4 - 1/3 cup milk
salt and pepper

1. Boil the potatoes in a pan of water with a pinch of salt. Drain and mash  with a potato masher or ricer.  If using  left over baked potatoes, scoop out the flesh and throw the skins away.

2. Heat a large frying pan  melt 1 tbsp butter , add olive oil.  Add garlic and cabbage . Soften the cabbage ,  add broccoli  and cook 1 minute.

3. Add mashed up potatoes  , along with the remaining 1 tablespoon of butter.  Mix well over a low heat , carefully add milk a little at a time till you a get nice creamy mash. Taste and season with salt and pepper.

Enjoy as a side .

  4. I love the idea of adding cabbage and broccoli to the mashed potato...not only add color as well as flavors...
