Its simple dish but tastes lovely. When choosing zucchini its good to buy ones that are small and firm, rather than the large ones as they tend to have slightly spongy centre.
Recipe : Stir fried Zucchini with Spices
3 small zucchini,
1/2 tsp black mustard seeds
1/2" piece ginger, peeled and sliced into match stick pieces (julienne)
1 clove garlic ( thinly sliced)
5 curry leaves
1/2 tsp chilli flakes
oil ( I used corn oil)
1. Using a vegetable peeling, thinly slice the zucchini into fine ribbons.
2. Heat a wok till hot ( or a large frying pan). Add your mustard seeds and once they start to pop, add curry leaves, ginger and garlic and stir fry quickly. Dont let the garlic burn.
3. Add the chili flakes, and the zucchini and toss to coat with the spices, Toss a few times and season with salt.
