Chilli Dogs


We all love hot dogs, especially the kids. I recently discovered some lovely sausages being sold at a local shop , which tasted better that the regular processed sausages we usually find in Maldives. Gills sausages at Seagull foods is  delicious, they have all kinds of flavors , chicken and cheese, french onion , chicken and garlic and beef sausages.  For me a good hot dog should have a good sausage.
I saw this hot dog version called a chili dog, which had  ground beef sauce, topped with sausages and onions and mustard. I know that traditionally its served with the chilli on top of the sausage, but I found it less messier if you put it under the sausage.

Recipe Chilli Dogs inspired by chilli dogs recipe shown on Emeril's Original on TLC

1 packet of Gills Chicken and Garlic sausages ( or use any of your favourite sausages)
12 small Hot dog buns
french mustard
chedder cheese slices( the sandwich kind)
1 onion, sliced
oil ( olive oil or  corn oil)

For the chilli
200g of beef  mince( I bought a piece of tenderloin and just ground it in the processor)
1 small onion, chopped
2 garlic, finely chopped
1 cup tomato passata ( or crush a can of tomato)
1 tbsp tomato paste
1 chilli finely chopped( optional)
1/2 tsp chilli flakes ( or more if you like)
1 beef stock cube
1 cup water
a dash of tabasco sauce
oil ( any flavourless oil)
salt and pepper

1. First prepare the chilli, heat oil in a large deep frying pan,  brown your ground beef.  Once brown, remove to a plate and set aside. Add onions to the pan and fry till translucent.  Add garlic and return the beef to the pan.  Stir in chilli flakes, chillies if using, and crumble the stock cube in.  Stir in passata and tomato paste , tabasco and  water. Bring to a boil then simmer covered till the beef cooks through and the sauce is reduced to a very thick consistency. Taste and add salt and pepper to your liking.

2.  Heat another frying pan with oil,  pan fry your sausages till brown and cooked through.  Remove and set aside .  Into the same pan, fry your sliced up onions till they caramelise , season with a tiny bit salt and pepper and remove.

3. To assemble your hot dog, warm your hot dog buns in a moderately hot oven just a few minutes, you dont want it to toast in there.  Cut each bun in the middle as you do for hot dogs. halve each cheese slice and arrange the halves at the bottom of  the bun.  Top  with a generous spoon full of chilli  you prepared.  Then  2 sausages, then top off with caramelized onions and mustard and ketchup if you like.
