Biscutlets



Biscutlets are like scotch eggs except it has tuna and potato instead of sausage meat.  It uses the same tuna and potato mixture as for cutlets, which are pressed onto a boiled egg half. Then rolled in breadcrumbs and deep fried.

Recipe: Biscutlets

1 1/2 can tuna
500g potatoes, boiled and mashed
1 medium onion, sliced
5 curry leaves or some mint finely chopped
1 tsp ground black pepper
juice of 1 lime
salt
6-8 eggs hard-boiled and shelled.
1 extra egg beaten
2tbsp flour
dried bread crumbs
oil for deep frying

The potato mixture is the same method as for cutlets but to make your life easier I will explain it again.

Place onions in a bowl along with lime juice and salt. If you like it extra hot add in a finely sliced chilli. Wearing gloves, squish the onions till the juices run out and the onions go soft.

Add mint or curry leaves, pepper and tuna. mix well.

Halve each egg. Take one half of an egg, take about a small ball of the potato mixture, and shape it over the egg half so it looks like it's replacing the cut half of the egg. Repeat with the rest.


Take two bowls. Make a batter using the beaten egg and flour and enough water to make a thick batter.
In to the other add dried bread crumbs.  Dip each egg cutlet into egg and flour batter and then roll in breadcrumbs.

Heat oil to fry and deep fry each egg cutlet carefully. Don't let the oil get too hot as the the potato mixture might start to burst.

Drain on kitchen paper and serve.

  4. I didn't know that scotch eggs are also known as biscutlets. I like yours made with tuna instead of sausage.
