A Simple Green Beans Side Dish


I love whipping up a quick side dish on days I make a meat or roast dish.  Green beans is something that is often the main ingredient that always ends up as the side.  This is something I came up with while trying to quickly rustle up a side dish.  It is great even alongside a rice and curry dish.
Recipe : Green beans and Tomato stir fry

Serves about  3 people.

150g fresh green beans, toppped and tailed and string removed, cut into 2-inch pieces.
1 large tomato, deseeded and sliced into strips
1 fat clove of garlic, finely chopped
1 small shallot or a small onion,   sliced
Olive oil
salt and pepper
1 red or green chilli cut in half( optional)

1. Blanch your beans as you would do for blanching broccoli. Click here to see how Drain and set side.

2. Heat a large frying pan or wok, add oil and let it heat up a little ( but not for too long, just a second) Add onions and stir fry for 1-2 minutes to soften it.

3. Add garlic and chilli if using.  Then the beans and tomato. Toss a few times,  then season with salt and pepper and serve!!!

It is so simple! I know! But sometimes we are racking our brains trying to think of all these complicated recipes but the simplest ones are the best ones. Make sure you get the freshest ingredients you can find and that's what makes all the difference, especially when it comes to vegetables.
