Tuna Stew



 I  saw this recipe in one of the cookbooks I borrowed from my sister, that is the beauty of having foodies in the family :).  It is a very easy recipe. The original recipe used fresh Italian tomatoes but I used a can of tomatoes instead.

Recipe: Tuna Stew recipe adapted  from Tuna and tomato stew from the book Mediterranean- food of the sun

For 3-4 people

300g tuna cut into cubes ( about 1-inch cubes)
1 onion, cut into wedges
1  can ( 420g) peeled chopped or whole tomatoes
2 cloves garlic( grated)
1/2 tsp mixed dried herbs or handful of fresh herbs
1-2 bay leaves
Chicken stock or water ( you can even use stock cube mixed up in water)
2 capsicums cut into thick slices
1 hot green chilli, slit in half ( optional)
Handful of green peas
2 tablespoons olive oil
1/2 tsp sugar
salt and pepper
Handful of fresh parsley chopped ( optional)

1. Heat oil in a casserole or saucepot,  fry tuna till lightly brown remove and set aside.

2. Add the onions and capsicum, stir fry for 1 minute, then add the garlic, tomatoes, bay leaf, green chilli(if using), herbs and sugar. Pour or stock into the empty can of tomato, swirl it around and pour the contents into the pot.

3. Bring to a boil, then lower heat to a simmer,  return the tuna to the sauce, along with the green peas and simmer covered till the sauce is thickened slightly and the tuna is cooked through. Season well with salt and a generous helping of pepper. 

4. Sprinkle with parsley just before serving. 

Serve with crusty bread or rice. I think this would go well with the garlic rolls I made a long time back :)
