Moranga leaves, and an omlette
The leaves are made to a condiment known as theli faiy where everything is fried, onions, chillies, garlic-dried fish and of course the moringa leaves. I hated sitting and plucking the leaves but then someone had to do it hehe, but now my mum said there is an easier way and that was to put the leaves in a plastic back and leave it for a day or two in the fridge or in a cool place and then shake the stems and the leaves will fall off, well most of them. This weekend I got some leaves from my friend who has a moringa tree growing in her back yard. To find out more information about this Moringa tree and leaves, click here.
Anyway here is one of the simpler ways to serve moringa, in an omelette.
For 1
A big handful of moringa leaves
A small onion or shallot or ¼ of a big onion, finely sliced
1 red or green chillies finely sliced
½ lime
Salt
2 eggs
1. Put the onions, chillies, salt and lime juice in a bowl and mix well with your fingers ( wear gloves).
2. Put the moringa leaves and then break the eggs in and beat the eggs in
3. Heat a frying pan with oil and then pour the eggs in. Cook till eggs are set and to your liking, fold in half and remove.
