Rice with Fish ( Masbai)



I love this rice . My mum makes it especially on fridays because its so easy and economical depending on what kind of fish you use. Its very popular among picnicers who go on picnics to other near by islands , and go armed with cans of tuna , rice, and the usual flavourings and cook in one big pot by the beach side. Everything is dumped in to the pot all at once and left to cook.

Serves: 2 people

Preparation time: 15 minutes
Cooking time: 30 minutes

125g basmati rice or any long grain rice
200g Fresh tuna fish, cut in to about 1” cubes or 1 tin tuna chunks, drained, or smoked tuna , cut into thick slices
1 medium onion sliced thinly
2 garlic cloves, grated
1” piece ginger grated
3 red chillies or ½ scotch bonnet
1 sprig curry leaf
3” piece pandan, leaf cut into big pieces
Juice of ½ lime
2 tbsp ghee or oil
½ tsp turmeric
½ tsp cumin powder
1” piece cinnamon
2-3 cloves
3-4 cardamom pods, ends snipped off
8 peppercorns
200 ml thin coconut milk
200 ml water
Salt


1. Wash rice , and set aside.

2. In a small bowl, mix onion, garlic, ginger, pandan, curry leaves, and lime juice.

3. Heat ghee or oil in a non stick saucepan, add the onion mixture and sauté for about 1-2 minutes, till the onion start to go translucent.

4. Add fish cubes and stir till opaque and starts to brown. Add whole spices, chillies, ground spices, and salt. Stir for 1 minute.

5. Add rice and stir fry the rice till coated with the onion and spice mixture.

6. Add coconut milk and then water. While adding water, keep in mind that the liquid level should be about 1 ½ inches above the rice. Check this is by placing your fingers in the pot. The liquid level should come up to the middle of your middle finger. 7.Cook the rice over a medium flame . Once the rice is absorbed from the top , bring the heat to the lowest , cover and cook for about 1 minute and switch off. Keep covered for about 5 minutes . Uncover and fluff it up and serve
Serve with a green salad and lime wedges , lonumirus and rihaakuru.

NOTE: U can use any type of fish available , this can be made with fresh fish, smoked tuna fish fillet cut in to ½ inch slices, or even a tin of tuna (drained) . If using tinned tuna, leave it in chunks, don’t flake it too much , and add it after adding rice. You can even cook in your rice cooker, cook over the stove till end of step 5 then add coconut milk and water up to the required mark and then let the rice cooker finish it up.

  2. I like anythign fish:) And rice and fish together is a real treat, love this kind of one pot meal...very fulfilling at the end of the day.
