Eggless chocochip cookies


I made my first batch of cookies when I was about 8 years old, So I was looking forward to teaching my own kids to cook. Unfortunately for me, my son suffers from atopic dermatitis and is a bit allergic to egg whites. So I try to limit his egg intake to once a month. I found this cookie recipe in a Nestle advertisement in an Australian weekly magazine so made them last week and they are simply irresistible. But next time I think I will reduce the sugar to 1/4 cup as the condensed milk is quite sweet.

Makes about 2 dozen jumbo cookies

150g butter/ margarine or veg spread
1/3 cup sugar
350g condensed milk. ( place a bowl on the scale then bring the indicator back to zero then measure the milk)
2 cups self-raising flour (I used plain flour and added 2 tsp baking powder)
150g chocolate chips ( u can use a mixture of white and dark chocolate)

1. Preheat oven to about 180- 200 degrees Celsius. Line an oven tray with baking paper.

2. Beat butter and sugar till creamy

3. Beat in condensed milk, then stir in flour, then the chocolate chips.

4. Wet your hands with a little water then take a spoonful ( tsp) and roll it between your hands into a ball then lightly flatten it onto the tray. Leave room between each cookie as they spread.

5. Bake till nice and golden. Leave to cool on a wire rack. They will harden once they are cooled.

Enjoy with a glass of milk or coffee for adults
