Cooking for 13!!!



Spent 4 days in Kuala lumpur, a rather heartbreaking trip as I couldnt taste much food during the day time , and the places are packed during the evening. But came back armed with a box of tacos shells .

Last night, Invited the maldivians living in this area for a breaking of fast dinner. Thats 13 adults , and 4 kids . If you are wondering how on earth i cooked for 13 , well it wasnt so bad, all you needed was a very good planning :) . The night before i made the pasta sauce , the basic tomato pasta sauce , with a few extra chillies , but unfortunately it ended up too hot , so added orange juice . Then I made the chilli paste for the chicken, made by the maldivian lonumirus, tomato paste, zest of 1 lime and juice of 3 limes , salt and butter.

The next day i cut the chicken, or rather spatchcocked it, that is removed the back bone . Its quite easy if you have a pair of kitchen scissors,first time i didnt it so was feeling quite proud of myself. Next lifted the skin on the breast and thigh and slipped in a teaspoon of the chilli past and massaged it between the skin and flesh. Then rubbed a little more out side. Roast in a 250 degree oven for about 1hr to 1 1/2 hours til nice and crisp our side and well done inside. Took me 4 hours to get all 3 chickens done.

Next came salad, a simple bean salad, one of my favourite jamie oliver recipes, simply boil green beans till tender, then drain well. Toss in a dressing of olive oil, lemon juice, a little mustard, a small grated clove of garlic and salt. Added the dressing about 10 minutes before serving becuase the beans tends to discolour after some time.

THe amount of pasta was the biggest challege, so ended up cooking 1 1/2 packets ( 500g packets). Made pasta just bfore everyone arrived. And mixed with the sauce.

THe dinner was quite a success, a friend of mine made some sausage rolls and i made some extra chicken tenders, breaded with seasoned bread crumbs. Desert was a ice cream cake made by my freind .

Have got some left over pasta today, so going to use it up to make a baked pasta dish. Dont want to throw it away, being frugal over food now adays :) Unfortunately havent got any photoes,was too busy the last minute that i forgot take some photoes of the table laid with food . So have added a photo of my view from the kitchen .
