Banana Fritters (Dhonkeyo kaju)


Everyone seems to be trying to figure out ways to get rid of overripe bananas.
Here is a very popular one prepared back at home. My mum makes them whenever she has too many bananas around.

4 ripe bananas ( small ones or 2 big ones )
4 tbsp sugar
1/3 cup flour
1/4 cup freshly grated coconut or desiccated coconut
a few drops of rose essence or tsp of rose water ( optional)
Oil for deep frying

1. Mash the bananas and mix with sugar.

2. Mix in flour, coconut and rose water if using. The batter should be of dropping consistency.

3. Heat oil. Using a teaspoon drop a spoonful of batter into the oil. Make sure the oil is not too hot and not too cold. If hot the fritters will turn black and tastes horrible, too cold the fritters will suck up a lot of oil.

4. Drain on a colander and serve immediately.
