Banana Fritters


EVeryone seems to be trying to figure out ways to get rid of over ripe bananas. Here is a very popular one back at home. My mum makes them when ever she has too many bananas around.

4 ripe bananas ( small ones 0r 2 big ones )
4 Tbsps sugar
1/3 cup flour
1 tsp baking powder
1/4 cup freshly grated coconut or desicated coconut
a few drops of rose essence or tsp of rose water ( optional)
Oil for deep frying

1. Mash bananas and mix with sugar.

2. Mix in flour , baking powder, coconut and rose water if using. THe batter should be of dropping consistency.

3. Heat oil. Using a teaspoon drop spoonful of batter into the oil . Make sure the oil is not too hot and also not too cold . If hot the fritters will turn black and tastes horrible , too cold the fritters will suck up a lot of oil in.

4. Drain and serve immediately.

  2. I haven't tried banana fritters with grated coconuts. Sounds and looks delicious! ;)
